Almost every American supermarket places milk along the rear wall. The layout is often explained as a trick to lengthen the walk, but the primary reasons are mechanical.
Refrigeration equipment lives at the perimeter
Walk-in coolers require compressors, condensers and drainage. That equipment is bulky, noisy and generates heat, so it is housed in back-of-house space.
Placing the dairy case against the rear wall lets it share a wall with that machinery, keeping refrigerant runs short and service access simple.
A cooler in the middle of the floor would require long insulated lines and would put maintenance access in the path of shoppers.
Restocking happens from behind the case
Dairy cases are typically loaded from the back through doors opening into the cooler, so the product is never carried across the sales floor.
That matters for a category delivered daily in large volume. Milk moves in crates too heavy and too frequent to restock through the aisles.
It also protects the cold chain. Product goes from truck to cooler to shelf without a warming interval, which regulators and suppliers both care about.
Some dairy suppliers stock the case themselves under a direct store delivery arrangement, so the rear position also keeps outside vendors out of the aisles during trading hours.
Receiving docks dictate the geometry
Deliveries arrive at the back of the building, so perishable categories are placed near where they enter to minimize handling distance.
Produce, meat and dairy therefore ring the perimeter, forming what the trade calls the fresh loop around the outside of the store.
Center aisles hold shelf-stable packaged goods that tolerate slower turnover and can be restocked overnight from a dry warehouse area.
Frozen food sits between the two, in island cases that need power and drainage but not the constant replenishment that the fresh categories demand every morning.
The long walk is a genuine secondary effect
Because milk is bought frequently by nearly everyone, its position at the rear does route most shoppers past a large portion of the store.
Retailers understand that and place high-margin and impulse categories along that path, but the placement of the cooler came first.
The same reasoning explains why the pharmacy counter and the deli sit at the far walls: destination categories are used to draw traffic across the floor.
Newer formats break the pattern
Small-format urban stores and warehouse clubs arrange things differently, because their delivery patterns and shopper missions do not match a full supermarket.
Stores designed around online order fulfillment place fast-moving items where pickers can reach them quickly, which is a different optimization entirely.
Some chains have added a second dairy case near the entrance for shoppers making a short trip, an acknowledgment that the long walk can also cost a sale.
